PASTA FABBRI: NATURAL DRYING

Since 1893, in Strada in Chianti, from father to son, we have been producing our pasta in the same way, without any modification, in the same square in the center of the town.

At Pastificio Artigiano Fabbri we still respect the traditional techniques of pasta production: drying is carried out “very slowly” (from 72 to 144 hours depending on the format) , temperatures are strictly below 38 °C and the pasta is pulled “ bronze ”, that is, with the help of original bronze dies from the 1950s. Finally, we select the best 100% organic ancient Italian grains , coming from mills carefully chosen for their grain-preserving grinding technique.
