  • DRYING TIME – The noodles were dried for 3.5 days ( 84 hours ) at temperatures below 38 °C.

  • IDEAL WITH - Thanks to their rolled shape and their roughness due to the Fabbri manufacturing method, the screws have a considerable capacity to absorb the sauce and cooking water. For this reason, this format is particularly suitable for preparations based on rich sauces, both vegetable such as the Genoese pesto (or its Tuscan variant with black cabbage) and meat or sausage ragout.
